Ale

Bottle conditoned/bottle Fermented

Bitter
A draught English pale ale that may range in colour from gold through amber to copper.The name indicates a generous amount of hop bitterness
Blond/blonde

Cask Ale
Also known as cask beer or real ale .A draught beer that undergoes a secondary fermentation in the cask in the pub cellar reaching maturity as a result of natural processes the style is mainly confined to Britain
Pilsner/Pilsener/Pils
Originally a golden hoppy lager brewed in the city of Pilsen in Bohemia now part of the Czech Republic a true Pilsner is usually around 4.5-5% A B V .In Germany Brewers either spell the word Pilsener or shorten it to Pils to avoid any suggestion their beers come from Pilsen in the Czech Republic
Lager
From the German meaning store or storage place similar to the English word for larder.Following primary fermentation beer is cold conditioned in tanks where the temperature is held just above freezing as the yeast settles at the bottom of the tanks a slow secondary fermentation takes place carbonation increases and a clean quenching spritzy beer results usually lacking the fruity esters associated with ale
Stout
once a generic English term for the strongest or stoutest beer produced in a brewery with the rise of porter (qv) in the 18th century strong porters were known as stout porters .Over time the term was shortened to just stout indicating a strong jet - black beer made with highly roasted malts and roasted barley and generously hopped the style is most closely associated today with Ireland
Porter
A brown (later black) beer first brewed in London early in the 18th century .Called entire butt by brewers it acquired the name of porter due to its popularity with street market porters .The success of porter created the modern commercial brewing industry in England and later in Ireland The strongest porters were known as Stout (qv)

Good News From Dancing Duck Brewery
Here at the Hilcote Arms we have received correspondence from The Dancing Duck Brewery
They are excited to announce the majority of there cask ales are Gluten Free
The Majority of there beers didn't need anything doing to them because the temperatures of the brewing process alone naturally destroyed the gluten
The brewers have spent the last few months running tests to ensure that there beers meet the necessary standards
For the remaining few they have been tweaking small additions of a product called Dehaze which targets haze sensitive proteins including gluten
Our goal is to showcase the best of real ales and keep you informed about the latest offerings from breweries like Dancing Duck and Welbeck Brewery. From traditional cask ales to unique brews, we have something for every beer enthusiast.
News From Welbeck Abbey Brewery
James Gladman Heah brewer , and Tom Roe Packing Manager from Welbeck Abbey Brewery are excited to introduce Duke the first imperial Stout. Fermentation with molasses gives this beer bold treacle flavour initially reminiscent of the classic Pontefract Cakes.After this burst of flavour the roasted and caramel malts impart a long-lasting bitte-sweet malt note The difference between Duke and Grand Duke is significantly discernible and they are really pleased with the result

This brew has been enchanced and matured to become our Grand Duke aged to perfection in Dropworks Rum Barrels.This extra stage has mellowed the bold liquorice flavors and added an undertone of vanilla sweetness from wood aging

What is India Pale Ale (IPA) ?
The Term 'pale ale' has been used for over 400 years.In terms of colour, all we know is that it would have been significantly paler than other beers at the time.Anything lighter than mid-brown could at some point have been a 'pale ale, As a flavour profile the emphasis is on hops rather than malt although there will be a good balance of the two .India Plae ale was notable in that it evolved from beers that were designed for cellar aging, so it is generally recognised as having a heritage of being pale, relatively high alcohol and having an assertively bitter and aromatic character
